Londonderry’s Michael Fairbrother, originally approved to produce and sell mead from his home, now operates out of a business on Londonderry Road. Mead, the oldest known alcoholic beverage, dates back to about 7000 BC. It is a honey-based wine, and predates grape-based wines. Fairbrother’s business is called Moonlight Meadery LLC.

These unique wines are made from honey, water and yeast; some also have fruit or spice added. Names like Desire, Bliss, and Admiration keep the meads in the theme of their tag line, “Romance by the Glass.” The term “honeymoon” is said to come from the father of a bride giving a happy wedding couple enough mead (honey wine) to last their first “moon” or month of their union to promote happiness and fertility. For the traditionalists or natural lovers, the “Au Naturelle” series boasts Sensual, a clean, gentle flavor with just honey, water and yeast that has the local wildflower honey taste flattering your tongue.

Bold, uncompromising and unique, Moonlight Meadery has exploded into the wine scene with a fresh, innovative product. Gift baskets and romantic picnic basket options are available. The wines are now available at 20 different stores and restaurants throughout the state. The retail and tasting room is open 11 AM to 7 PM Wednesday through Sunday, currently with over 20 different meads available. Fairbrother has over 15 years of experience making, competing and judging world class meads. His facility boasts a retail and tasting room as well as a production space. The production room houses several fermentation tanks ranging in size from 5 to 500 gallons. The facility has capacity to produce 100,000 bottles per year.
